Spam and Pineapple Lettuce Wraps

Instructions

  1. Combine all sauce ingredients and mix well. Set aside.
    The acidic element is crucial here to offset the richness and saltiness of the Spam. You can use just lime juice, or just vinegar if you don't have both.
  1. Dice the Spam, fresh pineapple, and red bell pepper to a uniform size (about the size of a pea).
    Of course you will need to clean and core the pineapple. I like to use a pineapple tool. Also, try to reserve some of the pineapple juice to use in the sauce. While fresh pineapple is ideal for the most elevated flavor, alternatively, you can use a can (15 ounces) of pineapple chunks.(diced). If you do this, you will have plenty of juice for the sauce.
  1. Fry the Spam in a non-stick skillet until ultra-crisp and golden brown. Remove from pan and set aside in large bowl. Remove any excess grease from the pan.
  1. Sautee the peppers, garlic, and ginger in the same skillet for a few minutes until slightly browned and the peppers are crisp-tender.

  1. Toss the pepper mixture into the bowl with the Spam and mix well. Pour the sauce over and mix again until will combined and everything is coated well with the sauce.
  1. Serve by spooning some of the mixture into butter lettuce leaves.  

    This is kind of messy to eat, but so delicious. You could easily make this into a bowl meal by tossing the mixture with a chopped lettuce of your choice and perhaps some leftover brown rice. In fact, I did just this with the leftovers and thoroughly enjoyed it!
