Beating the Gray with Kickin’ Fusion Chili!
We’ve all been there—that week that feels like a month (or is it a month that feels like a year??) where the sky stays a stubborn shade of dingy gray, and spring feels like it’s teasing us from just around the corner. When the weather can’t decide if it wants to bloom or flurry, I find myself craving something that feels like a warm hug but doesn’t require a trek to the grocery store.
This week, I decided to lean into the “stretch the buck” mentality and see what magic I could conjure from the back of the cupboards. The result? The Kickin’ Fusion Chili. It’s a comforting, budget-friendly bowl that helps pass the time while we wait for the thaw. By pulling together those pantry staples—cannellini beans, Rotel, and penne—and mellowing them out with a creamy queso blanco, you get a meal that is zesty, filling, and perfect for a cozy night in.
